Maine Oysters have strong, hard shells, plump and full meats and the beautiful briny and sweet flavor of the sea. Chill over ice on the half shell with a splash of lemon or a drop of cocktail sauce.
Live mussels should be tightly closed with a fresh smell. Discard any mussels with open or broken shells, or any that do not open after cooking.
